Healthy and Delicious Roasted Red Pepper Chicken and Avocado Salad Recipe

I love to eat healthy, whole foods, but sometimes I get stuck in a rut and tend to eat the same foods over and over again.Roasted Red Pepper Chicken and Avocado Salad

I mean…you can only eat so many grilled chicken breasts and tuna salads before you start to crave a burger with fries.

That’s why I love this healthy and delicious Roasted Red Pepper Chicken and Avocado Salad recipe:

Ingredients:
1 medium ripe avocado, peeled, pitted and sliced
1 tsp.  lemon juice
1 bag (10 oz.) torn romaine lettuce (about 10 cups)
2 cups  shredded cooked chicken
1 medium tomato, cut into wedges
1 small  cucumber, sliced
1/4 of a medium Vidalia or Walla Walla onion, chopped
½ cup Red Pepper
1/2 cup  Light or Fat-free Italian Dressing
¼ cup Parmesan Cheese

Directions:
Toss avocados with lemon juice in large salad bowl.
Add lettuce, chicken, tomatoes, cucumbers and onions; mix lightly.
Add dressing; toss to coat.
Sprinkle with parmesan cheese.
Serve immediately.

It’s easy to make, can be eaten with the chicken warm or cold (it’s delicious both ways) and it’s very healthy!

It tastes even better if you marinate the chicken overnight in the Italian dressing (my favorite is Garlic Expressions). Be sure to discard the dressing…don’t use it for the salad…and instead toss the salad with a little vinegar (plain, red wine or balsamic) and olive oil.

Great recipe! I’m big on salads and their variations (I even like to mix fruits and vegetables in one salad. For example melon, peppers, cucumber and cheese, etc)! keep it up!

Thanks Yavor! I also like to mix fruit, seeds and nuts into my salads as well! I really like the taste of bleu cheese mixed with a raspberry vinaigrette dressing and chopped and toasted walnuts. This combo really kicks up the flavor of a plain chicken salad!
